A snapshot would work fine for you since you need the server running, but if drive failure is what your concern is then running a RAID would work would it not?

Couldnt you just take a VM snapshot? I have never restored from one but isnt that what they are for?

That is messed up. I dont know what went wrong but why are you dual booting Win XP and Win 7? I would suggest having one OS, Windows 7, then using VMWare to have the second, Windows XP, as a virtual machine. Then you could have both running at the same time if you need be and not have to log out of ...
